This versatile “semicotto” cheese is made from full cream ewe’s milk. It is excellent eaten fresh or mature and is often grated to season other froods.
When fresh this cheese is white and as it matures it gradually changes colour to become light yellow.
When fresh it is soft and has a pleasant aroma.
While in its mature state it has a delicious strong taste.
Ovine milk, salt, rennet, lactic ferments.
